Two salami, one saucisson
A trio of our range of salamis and saucisson.
Salami with fennel & garlic Inspired by the classic Italian finocchiona, it has a fresh and clean fennel fragrance rounded out with a little red wine and garlic. The texture is fine, it is matured for just 4 weeks leaving it soft with silky fat.

Salami with chilli & oregano This is another Italian style of salami, similar to soppressata. Our version uses different spices; two varieties of fragrant mild chillies, one from Peru, one from the middle east, an excellent sweet Hungarian paprika and Mexican wild oregano.

Islington saucisson This is similar to a classic French saucisson. The quality and flavour of our pork is complimented by a mild blend of spices, peppers and garlic.
